Chocolate Covered Coconut and Potato Needhams

Chocolate Covered Coconut Squares, aka Needhams, are a uniquely delicious candy with rich dark chocolate covering a coconut-potato filling. The potato doesn’t actually taste like potato any more than wheat flour tastes like wheat. In fact, the potato is creamy smooth, rich, and sweet, adding a luscious dimension to the coconut filling. Needhams, much like their cousin potato candy (made with a salty peanut butter swirl) are considered Appalachian favorites – which they are – but iterations appear throughout the country.
