Ruby Chocolate Bar

We were able to get a small amount of Ruby chocolate to try out. Ruby chocolate is a new type of chocolate developed by Callebaut madefrom the Ruby cocoa bean. You can find out more about this “fourth” chocolate here:Rubychocolate.

The ruby chocolate is very creamy with berry notes and it has a tiny amount of citric acid in so there is a little bit of tartness to it. It pairs well with nuts and berries. If you want to live on the edge – give Ruby chocolate a try! We’ve also made some Ruby Chocolate Almond clusters.
